August 24th, 2010:

A New Found Love…

This morning started off with feeding two beautiful babies…and then feeding myself. My typical protein smoothie…

I like my smoothies in a bowl in case you haven’t been able to tell :)
Today’s smoothie included:
-Skim milk
-Frozen Strawberries
-2 small frozen bananas
-Scoop of vanilla protein powder
-Topped with my new granola…(I think I still like the Back to Nature Granola the best but this was good.)

After breakfast we got ready and went to the YMCA for me to workout and the babies to play in the nursery. They love playing at the Y! They are growing so fast and I think that they learn a lot while they are there interacting with other people.

Today’s workout was a 3 mile run. Then I had to leave quickly and head to Ingles and pick up formula. I wanted to hurry to avoid any hungry screaming. The greatest part was both babies fell asleep and I was even able to enjoy a treat…

I love McDonald’s Iced Coffee! Confession: The sugar-free vanilla is my favorite! But I don’t think it falls into my new “trying to give up artificial sweetners plan”. So today I just order a large iced coffee with cream only and I loved it! It was very yummy and tasted like coffee instead of dessert.

Lunch today was very colorful and yummy

Spring Mix Salad
Broccoli Slaw
Red Bell Pepper
Homegrown tomato
Annie’s Goddess Dressing
Can of tuna
Small spoon of hummus
4 Triscuit Crackers

After lunch I was super full for a few hours and then it was like hunger set in and I couldn’t get enough to eat. The babies went and stayed with a lady from one of our churches for a couple hours and I showered, did chores, and snacked!

On the menu: whole wheat tortilla, peanut butter, sprinkle of granola

My new found love is Naturally More Peanut Butter. It was on sale at Ingles for buy one get one free so I bought two jars yesterday and am thinking this is a good investment. I cannot get enough of it!

When we picked up the babies sweet Carolyn made us a plate of veggies and some cherry cheese pie to take home! (I can never turn down homemade food)

Dinner included cabbage, cole slaw, green beans, and macaroni and cheese. It was so good! I just felt like I could not get enough I just wanted to keep eating! so I had to have half a piece of pie for dessert. It is all about balance right?

I promise I only ate the small piece on the red plate :)

How many of you just cannot turn down dessert? I definitely can’t!

Salsa

For the past week Lew and I have been trying to make our second batch of salsa for the summer. It takes forever to get something done when you have two 6 month old babies rolling around in the floor!

Our salsa process:

-Peeling what felt like 100 tomatoes. We peel the tomatoes by letting them sit in boiling water for a couple minutes then putting them in an ice bath to cool off. Then the skin just falls off.

-I kept all the tomatoes in a zip loc bag in the fridge for a few days while I waited for the time to finish the process.

-Step two: I chopped 4 bell peppers, half an onion, 4 banana peppers, and 2 jalapenos.

-A couple days later I chopped all the tomatoes, combined everything in a pot and started cooking on the stove. We added a little sugar, vinegar, corn starch, Italian Seasoning, and Chili Powder.

-We let it simmer on the stove for a couple of hours. Then put it all in the fridge for a couple days while we were out of town.

-Finally, yesterday we pureed the salsa and canned it! It is very yummy!
