Dinner, Dessert and Good Friends make me smile :)

Today has been CRAZY!!!

This morning we woke up to a snotty baby boy :( My plan was to get him a doctors appointment this morning to have him checked out but they only had appointments for tomorrow. So, I didn’t make it to the Y to workout this morning which is putting me in a lazy mood! Tomorrow he will get to see the doctor in the morning then hopefully I will have time to workout sometime. I guess I will just wait and see what the doctor has to say.

Anyway…here is how my day has been…

Breakfast: Smoothie

After breakfast I made a lasagna for small group tonight.

Lunch: I roasted some broccoli, green beans, and mushrooms. In the same pan with the veggies I warmed some Morning Star “Chicken” strips.

I placed the veggies and strips on whole wheat tortillas. I put a dressing of Greek yogurt and pesto on the tortillas. This was surprisingly yummy!

After lunch I made a vegetable lasagna for small group. Then I made a cleaned up version of the chocolate cake with peanut butter cream cheese frosting.

Here are my recipes from today…

Spinach Lasagna: (The original recipe is for Spinach/Artichoke Lasagna from allrecipes.com)

  • Olive Oil
  • Garlic
  • 2 packages frozen spinach
  • 14.5 oz chicken broth
  • Sliced mushrooms
  • 1 jar of tomato sauce (I used Vodka Sauce)
  • Whole Wheat lasagna noodles (I used sliced zucchini and squash but thought it made the lasagna too watery)
  • Mozzarella Cheese

I started by browning the garlic with the olive oil. I then add thawed/drained spinach, mushrooms and chicken broth to the skillet and brought to a boil. Simmer for five minutes. Add pasta sauce and cook for another 5 minutes.

After it cooks down layer the cooked lasagna noodles (or uncooked if you are using the oven ready kind). Layer the spinach mixture with the noodles and mozzarella cheese.

Bake covered for 45 minutes and then remove foil and bake 15 more minutes. Let lasagna stand for 15 minutes before eating.

Cleaned Up Chocolate Cake

2 cups All-Purpose Spelt flour

2 1/2 cups Organic All Natural pure cane sugar

3/4 cup unsweetened cocoa powder, preferably Dutch process\

2teaspoons baking soda

1 teaspoon sea

1/2 cup vegetable oil

1/2 cup organic apple sauce

1 cup light all natural sour cream

1 1/2 cups water

2 tablespoons distilled white vinegar

1 teaspoon vanilla extract

2 eggs

Follow same directions from yesterday’s post and top with peanut butter cream cheese frosting. (Also in yesterday’s post)
