Today has been a long day! I have not felt too good. I am hoping getting back into my workout and normal eating routine tomorrow will help my body feel back to normal. (However I walked up my first steps since the race tonight and my legs felt like jello!)
The other problem today is that I feel so hungry! All day I keep wanting to eat and then I eat and my belly hurts and then I feel hungry again! Its driving me crazy and really making want to go get in the peanut butter jar but I promise I am going to resist!
For dinner tonight I could not decide what I wanted so I dug these few ingredients out and tried to make something real quick…
When I saw the pineapple in the pantry I started craving the pineapple cheese casserole my mamaw makes. I knew I was not going to make that but I did have some cheese in the fridge so I decided to try to duplicate the taste of the casserole in my dinner.
The result was interesting…
I sauteed the pineapple and mushrooms in a skillet for about 10 minutes. I then added some chicken from my leftover roasted chicken.
After the chicken was hot I plated my dinner and topped with sharp cheddar
This was good but like I said I have been in a weird mood today and didn’t really want this after it was cooked . So I picked out the chicken and had some sourdough toast. (I love toast!)
Tomorrow the plan is to wake up for Spin Class and Cardio Strength Intervals! Then possibly running with my friend Lindsay who is doing the couch to 5K program. I am very excited about her running a 5k! I know I just ran a half marathon but I have always wanted to run a 5k and would like to work on my speed with her while she is doing her training program.
