Today was trainer day, which means I worked out with Matthew and basically, he kicked my butt.
I don’t remember everything we did but I can give you a couple highlights:
- Sprints!! I have not ran at all since the half marathon and was happy today to do sprints. It was so nice outside, the weather here was amazing and made me want to run. Even though I ran on the treadmill it still felt so good!
- Highlight #2: I curled 20 lb. weights in my first rep of bicep curls! I did seven reps on each arm. I was super happy with myself!
We did not get home until 7:00 tonight and did not have much to choose from in the food department but in our effort to save money we used what we had on hand.
For Lew, I grilled a beef burger in my favorite iron skillet. (Not exactly a healthy recipe)
For myself, I warmed a mushroom lovers veggie burger and popped some frozen sweet potato fries in the oven.
I topped my burger with a triangle of laughing cow, garlic and herb cheese!
The highlight of my dinner was the little slice of pumpkin cheesecake I made on Saturday.
Last Saturday I made a Pumpkin Cheesecake using a recipe I modified from Libby’s Pumpkin Cheesecake recipe. This cake was spur of the moment, I was making it for an auction and we ended up buying it
I guess last years peanut butter chocolate cheesecake I sold was a better idea.
I used this recipe. I found this recipe was very simple and quick. (Other than having to let it sit for like 8 hours.)
I did not have 2 cups of sour cream so I simply cut it back to 1 cup and just made a thinner layer of topping.
I love this cake! Not as much as Libby’s recipe but it sure is yummy. I only hope I don’t end up eating the whole thing
