I Love Grocery Shopping!

I really love to grocery shop! Today a very sweet lady from one of our churches watched LB and Daisy so I could go grocery shopping. I love to buy groceries by myself. There is something about the planning and preparing and looking at all the food that I really enjoy. Even though it was raining and terrible weather to go to the store it was a necessity because we were seriously out of food! Do you ever get to that point where you have food in your house but there is nothing “to eat”. That is how we were. My pantry and fridge looked full but there was nothing to make a meal. I am now happy to say I have enough food to have all meals at home until we leave next week for San Francisco. (Where I plan to have the best food of my life at the Foodbuzz Festival!)

Over the last 8 months I have done most of my grocery shopping at Ingles because I love their effort to provide so many organic and all natural options. However, I have noticed that when I shop there I spend way too much money. So, my last two trips I have shopped at Wal-Mart and have made extra effort to read labels and know what I am purchasing. I have successfully spent less money and am not sacrificing the quality of food. Even though I really don’t like Wal-Mart because it is so big and just has so much I am learning the best times to go and had a great time today.

Anyway…tonight I purchased this California Pizza Kitchen frozen pizza…

This was a traditional White pizza and was awesome! The ingredient list wasn’t too shabby and made for a great quick meal.

Today’s workout was TOUGH! At one point I was seriously sitting in the floor holding a trash can! Thankfully I didn’t need it. During the workout I had a fear I was getting the stomach virus that the rest of my family has had. However, I think I was just wore out! I mean I haven’t workout out in 5 days and then we kept going back into the spin room which was super hot and then with the combination of all of that and the fact that think I might be getting a small touch of stomach virus was just not good! I did have a fun workout though and feel like my butt was seriously kicked!

Breakdown of today’s workout:

  • 1 minute sprints (4 rounds)
  • Box Jumps and Jump Rope (Intervals)
  • Burbees and Step ups (intervals)
  • Leg lifts with added ankle weights and high knees with weight ball (intervals)
  • Abs
  • Leg extensions and hamstring curls

My legs are dying!!!

For breakfast I had peanut butter toast and a drizzle of pure maple syrup and a glass of skim milk.

I had an early lunch (11:30) I had both babies in bed and was starving!

Leftover Mexican pie I made last night with a side of black beans.

I made this casserole last night and was not impressed with it. I did not have  all the ingredients I wanted on hand and Lew will not eat beans so I did what I could with what I had.

I sauteed grated tempeh and cooked it with a can of tomato soup and about 3/4 cup of salsa. I added some chili powder and a few other mexican seasonings I had in the pantry. (You could use a taco seasoning packet) I also put 1 tbs. half and half and 1/4 cup of skim milk. I added about 1 cup frozen corn and cooked down for about 10 minutes.

I lined a pie plate with tortillas (I would normally use whole wheat but had these in the fridge leftover from a church event and didn’t want them to go to waste.) I poured in the filling and added some cheese. I topped the pie with the remaining three tortillas and then baked on 350 for 20 minutes.

This was not the greatest and tasted too much like tomato soup and I made it too spicy. It was pretty good though.

I am going to go grocery shopping in a bit! Wish me luck that I don’t overspend and I come out with lots of healthy colorful food!
