November 18th, 2010:

I am Thankful…

Up until a couple days ago I honestly didn’t realize that Thanksgiving was next week. I mean, I knew it was November but I just didn’t realize Thanksgiving was next week. Now that it is officially one week away I thought I should start thinking about things I am thankful for. While riding in the car this evening on my way home I had a little time to reflect on a few things and thought I should share a few of these things with you. I think I will also attempt to post things I am thankful for the rest of the week leading up to Thanksgiving.

I am thankful for tough workouts.

I am thankful for being able to wear pre-pregnancy pants. (And will be even more thankful when I can wear all of them :) )

I am thankful for sweet baby smiles.

I am thankful for teething tabs that make my little boy feel better.

I am thankful for Earthfare and this super yummy salad I had for dinner.

I am thankful for vegan tofu chocolate chip cookies! (yes, these were SO good!)

I am also thankful for the free chicken salad we received from Earthfare with their coupon.

And lastly for tonight, I am thankful for my husband who gave me the keys to drive his car the 45 minutes home tonight and he drove the babies :)

And now, I am thankful for Grey’s Anatomy…yes, I am serious :)

My Love Affair with Leftovers!

I have a problem, when ever there are leftovers in my house (like a lot of leftovers) I cannot seem to quit eating them. For instance, when there is lots of turkey and dressing in my fridge from Monday night or soup from last nights dinner at church. Something about all of that food makes me want to keep snacking and snacking. I see some packing up for the freezer in my future.

Today started off with the last of the sourdough bread toasted with naturally more peanut butter (my fave) and honey.

Now that the loaf of yummy sourdough is gone there is one less temptation around my kitchen.

Today I took High Intensity Training and Hard Core class and I am not feeling it! My abs and booty are killing me! That is a good thing though because we are now to 22 days until our snowboarding vacation!

Lunch was leftovers of course…I had an early lunch because I came home starving and both babies were asleep so I went ahead and ate my lunch in peace and quiet.

Leftover Cheesy Chicken soup and 1/2 turkey sandwich.

Yum!

I think LB and Daisy are finally getting adjusted to the time change! Just when I was getting adjusted to being up before 7. Now I just have to keep reminding myself how much I was liking getting up at 6:45 every morning and maybe I can keep my new routine going.

Tonight we are having dinner with friends at Earth Fare! Yay! I am excited!
