The Ultimate Cheese and Crackers

Good Morning! I was so happy to wake up this morning and know that I could go to the gym! What was even better about this morning is that it was snowing! Now, I live in northeast Tennessee and we don’t get a lot of snow. As a matter of fact, when we moved here in June 2009 everyone told us it NEVER snowed in our town. Well, last year we had more snow fall than they have had in like 24 years! The kids were able to use all of their snow days at school. I love snow! I love cold weather! Most people think I am crazy but I do. However, I have to start dressing a little warmer. This morning I wasn’t expecting the 30 degree weather I stepped out into after being almost 70 yesterday!

Last night I snacked for dinner. In our house we like to call it grazing. I ate and ate but never felt satisfied. When I woke up this morning I felt stuffed and was not in the mood to eat so I ate a small pumpkin muffin and headed to the gym.

I had an awesome workout but my body was definitely telling me it realized I hadn’t been to the gym in over a week!!! Luckily I had done some arm exercises while watching TV so I wouldn’t feel too out of it.

I am definitely going to have to do better while we are away from home with working out. I know I just need to start planning a run while we are away but with the babies it can get to be a lot.

What are your tips to working out while you are away from home during the holidays?

After working out on an almost empty stomach I was STARVING when I got home. I was really craving peanut butter but opted for cheese and crackers. Yesterday I was feeling really sluggish and when I checked my pulse it was pretty low. After some googling I learned this was probably from my bad night of sleep the night before along with my lack of exercise. So, after a little more googling I learned that boosting your iodine intake could help this and one way to do that is with dairy. This is how the ultimate cheese and crackers came about.

I know this a lot, but remember, I was STARVING! :)

One light laughing cow cheese with triscuits

Wheat Ritz with homemade pimento cheese and a small glass of skim milk!

I think there will now be some coffee courtesy of my dear keurig in my very near future. I will just need to fight the urge to have my chocolate chips on the side! Speaking of coffee and chocolate, that is one thing I LOVE about Europe. When you order coffee in Europe they also bring you a cookie! I think we should do this in America. I mean really what is better than coffee and a cookie :)

Happy Tuesday!

    Hi Lew,
I read your marathon story on Meghann’s blog, and glad I saw it there because the link you tweeted to me yesterday didn’t go to your marathon story! What a story! I will think of you on Sunday as I do my first Half if I get leg pain. I’m hoping to push through any pain, but your pain must have been much worse and longer!

Lew – just read your marathon top 10 list on MealsandMiles and love your sense of humor :) Congratulations on such a major milestone and setting a good example for your kids! I’ll be thinking of you during the rest of my race season – keep it up! Looking forward to future stories from you!
