Small Group Christmas

This morning I woke up to the second snow day in a row! Where we live in northeast Tennessee snow is not something that is guaranteed. However, the last two mornings school has been called off and I am stuck inside banned from my YMCA because the roads are to slick. Where we live there is no service to clear the roads so even one inch of snow when then temperature hasn’t been above freezing in two days leaves me stuck in the house.

Waking up to a snowy day definitely called for some oatmeal. Thankfully I was able to make it to the grocery store yesterday so I was able to have something other than a banana boat.

I heated 1/2 cup old fashioned oats with 1 cup of water in the microwave. I then added a spoonful of skippy natural peanut butter and a drizzle of honey.


Yes, that is a dough ball in the oatmeal. And yes, I did crumble it on top and it was delicious!

Speaking of dough balls, I made a batch for our small group last night. Twice a month a group of 20 & 30 somethings from our church come over to our house for dinner and fellowship. It is definitely my favorite part of the week. Since this was our last small group of the year I thought finger foods would be a fun way to celebrate Christmas together. For my contribution I made dough balls, spicy chicken dip, peachy cream cheese and crackers and I also had a peppermint bark fail!

I made one batch of Mama Pea’s dough balls. I made just a couple of changes with the flour. I used 1 cup of unbleached all purpose flour and 1/2 cup whole wheat flour. I also didn’t use all organic ingredients simply because I was out. They turned out wonderfully! I also changed my recipe from the last time I made them and used skippy natural peanut butter and I think that made a big difference. I mean they were good last time I made them but were even better this time!



For my peachy cream cheese I simply topped a block of 1/3 less fat cream cheese with some melted peach preserves.


Peppermint Bark Fail! When I was picking up my ingredients for this I found this bag of Andes peppermint pieces. I thought this would be great and so much easier than breaking up candy canes. Well, I was wrong! These were not peppermint pieces they were like a mix between a chocolate chip and peppermint texture. So, when I mixed it with the melted chocolate it blended and melted and completely changed the texture of my chocolate. Lew says its good but it is WAY too sweet for me and it will no break without flaking into a million pieces.


Spicy Chicken Dip

I made a chicken dip a few years ago and since have not been able to find the recipe so here is my version of that long lost spicy chicken dip recipe.

  • 1 can all white meat chicken
  • 1 block of 1/3 less fat cream cheese
  • 1 cup mayonnaise (I use reduced fat made with olive oil mayo)
  • 1 can rotel
  • 2 cups shredded 2% mexican style cheese

Bring cream cheese to room temperature then blend with mayonnaise. (I use my kitchen aid mixer or a hand mixer) Add remaining ingredients and mix until well combined. I blend these ingredients with the mixer as well. I think it adds a better texture to the dip. Bake at 350 for 30 minutes.


Another reason I love my small group is that they all bring really yummy food! We had all kinds of stuff which I actually photographed. I a, still in love with my new camera.

I think that was everything! Now I am off to do laundry, finish cleaning up from last night and begin packing for our winter vacation! Two days until we leave!!! I am so excited! And Mama Jane and Daddy Doc, you will be excited to know that LB and Daisy have been back to normal today for the first time in about a week and they are very happy to come see you!

  2. Love that you topped your oatmeal with a dough ball! Sounds like a fun breakfast! Too bad about the peppermint bark! I hate it when things are too sweet! The spicy chicken dip sounds good! Love how easy it is to make! Wow, that’s quite a spread of food! Everything sounds delicious!
