This afternoon I was desperately running from the kitchen to the pantry (which is in the dining room) trying to figure out just what I wanted to make for lunch. After pulling out the most colorful things out of the freezer we had tilapia, spinach, sweet potato fries and homemade salsa from the fridge.
I started by preheating the oven to 400 degrees and placing some of the fries on a cookie sheet.
After 20 minutes you will have the best sweet potato fries you have ever put in your mouth. Seriously! Lew could not stop talking about how good these were and they deserved every compliment.
I thawed the tilapia fillets by running warm water over them (while still in their sealed package) for a couple minutes. In a skillet I melted about 1/2 tablespoon of real butter with two cloves of pressed garlic.
I love the garlic press! In my opinion it is so much easier than mincing the garlic by hand.
I placed both fillets in the butter and garlic and cooked 4 minutes on each side.
In the empty space in my skillet I placed about one cup of frozen cut leaf spinach with 3 spoonfuls of salsa.
Add a little salt and pepper and you are done. It is that easy! This meal was very good and very simple. A perfect lunch.
After lunch and LB and Daisy’s nap time we dropped them off with a sweet lady from church and headed out to run errands. After a quick stop at TJ Maxx we needed a little fuel (Lew had a headache and knew french fries would do the trick). I decided a small frosty would be a good idea.
Now here is what is left on the agenda for today:
- Shower (hopefully)
- Make Christmas cards so I can pick them up at Sams tomorrow
- Get babies schedule typed up for Lew’s parents
- Church at 6:00
- Bath babies
- Feed babies
- Pray babies go right to sleep
If I can get all of this done before my 5:30 am wake up call it will be a miracle! Wish me luck. The next time you hear from me I will be on the road!
