My husband has decided to make some major changes in his life regarding his view of food and exercise. He is even going to be taking part in blogging to help him with his new fitness adventure. He will making his second writing appearance on Ash & Lew Plus 2 tomorrow. (Check out his first post about his marathon.) Anyway, I knew he was wanting to do some indulging tonight so I wanted to make something healthy and colorful for lunch today. (Our dinner came courtesy of Little Ceasar’s and a dipped cone from Dairy Queen).
In my efforts I came up with chicken sausage spinach sauté.
I started with a drizzle of olive oil and one organic carrot chopped into small pieces.
I cooked the carrots for a few minutes and then added a drizzle of balsamic vinegar. I then added two links of Saag’s chicken sausage. (if you were a winner of the Saag’s giveaway I will be notifying you this week when you should be receiving your package.)
After the sausage was brown I added two large handfuls of fresh spinach and two tablespoons of salsa.

I served our sauté with hummus, pita chips and a hunk of bread.
After pizza and cheese bread I am stuffed and ready for the New Year! I am also ready for some healthy food and tough workouts!
