Ice Cream!

Dinner tonight = terrible!!

2nd Dinner = Awesome!

The dinner I made tonight did NOT turn out very well. I was rushing around because I thought we had somewhere to be at 6:30 when I said to Lew “I really just want to go to Dairy Queen.” Well, I thought we had a meeting but when we arrived at the church we remembered it is not until next Monday. So, of course, we went to Dairy Queen! My favorite thing to order there is a dipped cone in a cup. They do not actually give you a cone they just serve ice cream in a cup and top it with the hard chocolate. The best part is the extra chocolate that thickens around the edge! It is perfect every time! Lew and I use to have a habit of driving to the DQ on evenings we had free because it seems like the obvious choice of a perfect end to an evening. Luckily we have gotten out of the habit because it is really bad for the waistline! However, it was perfect for tonight!

After our second dinner we visited with some of our favorite friends! The best kind of friends are the ones you can show up on their door step at night with two babies with no notice but are happy to have you there! After a few games on the wii and some veggie lasagna for Lew we headed home to put the babies to bed. By that time I was hungry again and decided to make a date with my old friend

We have been out of peanut butter for almost a week and I really miss it! So, I made a peanut butter sandwich using sliced strawberries instead of jam!

Day Off…Well, Sort Of

Being a stay at home mom and a pastor’s wife I feel like I never truly get a “day off”. Unless we leave town and someone is watching LB and Daisy for us I always feel like I am “working”. I take on a lot of responsibility with helping Lew care for our two churches and really feel like being in ministry with him is what I am called to do. With that said, sometimes you just need a day off and normally Monday serves the purpose. Well, at least Monday afternoon. So on Monday’s Lew goes to our local outreach in the morning then we head to the gym as a family and then after lunch we sit on the couch and watch TV for awhile. Monday evenings are always filled with a church function but it is nice to take an afternoon and just not do anything. (Other than care for two 11 month olds Smile) So, needless to say I normally enjoy Mondays a lot more than most people.

Breakfast

After reading Tina’s series on grocery shopping I have been inspired to reevaluate the way I grocery shop. I do a good job of meal planning and such but I tend to let food go bad or let ingredients sit in the pantry without using them. So my goal for the next few weeks is going to be make meals from ingredients I already have to let my surplus of food get smaller and also save a little money.

So for breakfast this morning I made egg and cheese burritos grilled on the panini grill. They went un-photographed but they were really good. I scrambled 2 eggs and 2 whites placed them on two tortillas with a little cheddar and then pressed them in the panini maker. The only thing they needed was a little salt. Other than that I was quite pleased!

Workout

We have gotten into a new routine and have been working out from around 11-12. This time is really working for us and LB and Daisy. So before we workout the babies take about an hour nap and I get some housework and coffee drinking time Smile.

For todays workout we did a 30 minutes session of cardio intervals and then a 20 minutes full body strength training. I cooled down with a few minutes running and walking on the treadmill. From doing the 5 days a week of workouts and the extra strength training I am really feeling myself get stronger. I feel like I am doing better with the workouts from Lindsay then I was doing when I would take the classes at the gym. My goal is to incorporate the workouts we have from her into a new routine after the Fit Bloggers Challenge is over.

Lunch

For lunch I tried a new product that I was really excited about.

I was really looking forward to trying this but was not very impressed. I love all the ingredients but something about them together in this way did not work for me. I think it might have been better if it were something I made from fresh ingredients. I love Alexia and most of their products but this one needs a little work.

I served this with the last of my organic spring mix from Sam’s.

Well, I am off to play with babies and do laundry!
