Ash & Lew Plus 2 Rotating Images

Snow Day!

Well it snowed! As I told you last night I love snow. However, as much as I love snow I am beginning to get a little stir crazy. We did not make it to the gym today because of the snow and some back issues Lew was having this morning and I need a little motivation so Lew and I decided to have a little game night tonight.

Our breakfast was very normal. I cannot stop craving oatmeal with almond milk so I had to same bowl again! (Minus the banana)

Lew had eggs (one egg and one white) and a slice of toast.

Luckily I stocked up on some food stocked up in the pantry and fridge so we have plenty of supplies for lunch today. I threw together a quick salad and grilled some polenta in my skillet.

Organic polenta with sundried tomatoes. (Found in the produce section at ingles).

I topped the polenta with feta and a little homemade dressing.

  1. I have been meaning to make polenta and have yet to get around to it because I keep forgetting to add it to my shopping list! *adds it to list* Thank you! :) I bet it was delicious with the sun dried tomatoes!

      I really like polenta also but I rarely remember to buy it. I still have half of the tube so I think I am going to mash it up and make something different for the next go around.

    Ohmigoodness, ohmigoodness! Polenta is what they call cornmeal here in Peru and I was totally taken off-guard to see it here on your blog! This reminds me of fried mush… have you ever heard of it? I mean, it’s the same thing but with a different name and minus the sun-dried tomatoes. You fry it and drizzle it with syrup. It’s soooooo good! Definitely Southern cooking. :) What other things could you do with polenta I wonder?

      Fry it and drizzle with syrup! Count me in! I am not sure of many other ways to fix polenta but I am going to do some googleing for the next time I fix it.

  4. Making it to the gym was hard for me when I went to one. After a long work day and commute in traffic, the last thing I wanted to do was leave the house again in the cold and dark. Our home gym has been a huge help, I actually started working out more when we got an elliptical and Bowflex since I could on my own schedule.

    Lunch looks great!

      I am glad working out at home works for you because I hate it! I love the gym for a lot of reasons. One reason being the free child care for 2 hours a day :)
