More Peanut Butter…

Some days are just no fun and that is exactly how today has turned out to be. This morning we got out for an hour or so to run some errands and when we made it home we realized LB had a fever and just wasn’t quite himself. After cleaning up the “sickness” we will call it he took a shower with his daddy (his favorite thing to do) and we went on with the rest of the day. His fever is now gone and I think he is beginning to feel better but we will just say that today was full of a lot of cuddling on the couch and pedialyte. With all of the sick fun going on there wasn’t much time for me to be creative in the kitchen but we did get lunch and dinner on the table and I consider that a major success.

Lunch

For lunch I took some leftover spinach and artichoke dip from last night and used it to top some chips for some quick nachos. I used an assortment of corn tortilla chips, whole grain tortilla chips and baked pita chips. I topped them with the dip and baked on 450 for 10 minutes and then on broil for 5 minutes.

I served the nachos with a veggie burger. I had a tomato basil pizza burger and Lew had the mushroom lovers burger.

Snack

For an afternoon snack I made a little yogurt bowl for Lew and I to split. For some reason (probably because it was the 15 minutes both babies were asleep at the same time and I wasn’t thinking about the camera) I did not get a photograph.

In the yogurt bowl:

  • one container of Chobani Greek yogurt with honey.
  • Sprinkle of bear naked granola 
  • About a teaspoon of peanut butter

I stirred everything together and it was wonderful. Here is the conversation we had about this snack.

Lew: You know what this needs?

Me: What

Lew: More peanut butter

Me: Couldn’t everything use more peanut butter?

Lew: Well…this is really good! Why have you never made this before?

Me: I have but you always said it looked gross…

Needless to say, we will be having a lot more yogurt with peanut butter in our house.

Dinner

For dinner I warmed up some homemade chicken noodle soup that Carolyn sent home with us after we ate lunch with her last week.

This was so good! LB and Daisy loved the carrots and the noodles.

Sadly there was again no work out today. However, we have a schedule made for tomorrow and as long as LB is fever free we will both be making it to the gym. If he is not fever free I will be doing an at home workout of some sort!

Game Night

After the Tostito Bowl ended after midnight I decided my time would be best spent sleeping rather than blogging.

Yesterday afternoon when I sent out the text message to my friend Lindsay that I thought we should have a little game night because I needed some motivation to get off of my bootie I got a quick response and we threw together a fun and easy get together. The snow is lovely and I love it but it also makes me lazy. I have a thing where I can only be lazy so long and then I like to be productive. So, Lew bought stuff to make spinach dip, Lindsay was in charge of enchiladas and within a few hours we had a great dinner and a great time with great friends. Little did I know last night was the Tostito Bowl National Championship between Oregon and Auburn. When the guys in the group kindly reminded us girls of this fact we changed the theme to game/football watching night.

We wanted to throw together something quick so we could fit in as many games of Wii Wheel of Fortune and Family Feud as we could before the football game started.

My contribution was a spinach and artichoke dip that I threw together without a real recipe. I always want to make my own spinach and artichoke dip but afterwards I remember it is better to follow a recipe. However, Lew loved it and since that is all he wanted for dinner that is all that really matters.

Spinach and Artichoke dip

(Makes A LOT!)

  • 2 10 oz. blocks of frozen spinach (thawed and drained)
  • 1 14 oz. can artichokes (drained and chopped)
  • 1 block of cream cheese (I used fat free); room temperature
  • 2 cups of grated parmesan cheese
  • 3 cups of shredded mozzarella cheese
  • 1/2 cup Olive Oil reduced fat mayo
  • 1/2 cup sour cream

Mix together and bake  at 350 degrees for 30 minutes (Or until hot and bubbly)

For dinner Lindsay created some quick and easy enchiladas. They were quite yummy! We really like enchiladas in our house so when she told me her suggestion for dinner we were very excited.

Lindsay’s Enchiladas

  • 2 large cans all white meat chicken
  • 1 small onion (cut into strips)
  • 1 green bell pepper (cut into strips)
  • 1 tbs. ground cumin
  • 1 tbs. Mrs. Dash Chipotle Lime seasoning
  • 8 burrito size tortillas
  • 16 oz. block of Monterrey Jack cheese (cut into chunks)
  • 8 oz. block of Pepper Jack cheese (cut into chunks)
  • Splash of milk

  1. Pre heat oven to 350 degrees
  2. In a skillet sauté onion, pepper, and chicken with seasonings until onion is transluscent.
  3. In a microwave safe bowl heat cheese with a splash of milk until melted. (Takes about 5-6 minutes total)
  4. Fill tortillas with chicken/veggie mixture, roll up and place in a casserole dish. Top with melted cheese.
  5. Bake for approximately 20 minutes. (Until bubbly)
  6. Turn oven to broil and cook until brown and crisply (approx. 3 minutes)

The crispy ends of the tortillas and the bubbly cheese is oh so good!

Last night I ate one enchilada and one scoop of spinach dip. After dinner there were brownies but I did not eat one! This is a huge accomplishment for me. Instead I had two small clementine oranges. Definitely a good replacement to tame my sweet tooth.

Breakfast

After staying up past midnight and getting up at 3:30 with a fussy baby and then back up at 7:45 I was not in the mood to cook breakfast. So, we pre-heated the oven threw some bread in and had the perfect toast topped with peanut butter and honey.

I had two slices and Lew stuck with one. I love peanut butter toast so much one is never enough!
