Cupcake Adventure!

I was asked yesterday about my final cupcake decision for LB and Daisy’s Birthday party. I have completely forgotten to give you all the cupcake details. Well, actually I forgot to bring my recipe to my mom’s house so I haven’t had all the details. But there is definitely a story behind the final decision.

After much thought I had decided to make pumpkin/chocolate chip cupcakes with cream cheese icing for LB and Daisy. I had also planned to make a batch of Dark chocolate cupcakes with cream cheese icing so I would have multiple options for everyone.

So, last Thursday I started on my baking frenzy with the chocolate cupcakes. I used my favorite chocolate cake recipe from this cookbook I bought in the checkout line of wal-mart a few years ago.

I LOVE this little book! (I promise I will share my version of this recipe when I am back home.)

The recipe is for a layer cake and calls to cook the cake on 325. I baked my first tray of cupcakes on 325 but they never really rose so the next tray I did 350 and they turned out much better.

The best part of the recipe is the dark chocolate…

I topped the cupcakes with a homemade cream cheese icing.

Friday afternoon I set out for the second part of the cupcake adventure to bake the pumpkin cupcakes. I have made the exact same cupcakes before and they turned out perfectly. This time I doubled the recipe and I subbed applesauce for the plain yogurt. Lets just say this was a major failure! I think I might have forgot the eggs but I am really not sure. By this time it was Friday evening and I was so frustrated with the sight of those cupcakes I went to the store bought boxed cake mix and frosting in a jar and made two batches of those to use when mine ran out.

So…I let the babies eat chocolate cupcakes. They were made by my two hands with all natural ingredients and I knew exactly what they were putting in their mouth. They might not of had pumpkin or flax but they were good. They did have dark chocolate…

So, that is what happened with the cupcakes. They were so good! I do not plan on making giving them desserts a habit but hey, it was their birthday!
