Sampling…

As my Friday is coming to a close I am finally sitting down to reflect on the happenings of the day.

Our day began by saying goodbye to our friends, The Weatherfolk. We wish Ken and Casey well on all of their upcoming adventures and hope to be able to visit them sometime at their new home in Scotland.

For breakfast I was craving cereal. It has been unseasonably warm her in east Tennessee so I woke up wanting something cold. Our plan was to get up, head to the gym and then go to Sam’s and Best Buy this afternoon. Our plan to leave early didn’t happen but we made to to the Y with 45 minutes of childcare left. So I did 45 minutes of cardio on the elliptical and called it a day.

Lunch

We had a difficult time deciding what to do about lunch today. We have given up eating out for Lent but we also have discussed that there will sometimes be exceptions. So leaving from the Y at 12:00 and then driving 45 minutes to Sam’s was going to be one of those exceptions. The plan was to pack the babies some food and Lew and I would get salads in the Sam’s café area. What we had forgotten is that on Friday’s at our Sam’s they have TONS of samples! So, while we shopped we ate and by the time we were done the whole family was full. Smile Sounds crazy but it worked and it didn’t have to spend any extra money.

Dinner

For tonight’s dinner I made a recipe from my Nestle cook book for spicy macaroni and cheese with broccoli. It was ok but I would say the recipe was overall not really successful. It called for it to bake 30 min. Well, I baked it for an hour at least and the cheese and evaporated milk never melted together to make it like macaroni and cheese. It still tasted good but was not what I was expecting.

I served the pasta over organic spring mix.

I used rigatoni because I could not find whole wheat macaroni noodles.

I promise tomorrows post will have lots of playing outside pictures of LB and Daisy! It was beautiful today!
