Good Morning! Well, since I have been missing in the blog world for the last few days I put “Blog” at the top of my mental to-do list this morning. For those of you who do not know both my home town and my current town were hit by devastating tornadoes on Wednesday. Thankfully my family and myself are all safe and still have our homes but many were not as fortunate. There are many people who have lost their lives and their homes. I really have no words to describe the feelings I have towards the situation. It is hard to comprehend such awful situations so close to home. Please pray for all of the families in the southeast who have suffered loss this week.
Tuesday night before the Angel Food Cake I cooked a nice dinner for Lew and I.
I was really needing to throw together a quick dinner because LB and Daisy were having one of those days. So I evaluated everything we had and came up with bbq baked chicken with roasted broccoli and green beans and rosemary mashed potatoes.
Since planting the herbs I have been wanting to use the rosemary but hadn’t had the opportunity to really cook anything. So here is how it went down…
Rosemary Mashed Potatoes (for 2)
- 4 red skin potatoes
- 2 tsp. fresh rosemary; chopped
- 1/2 cup sharp white cheddar cheese
- splash of skim milk
- Slice potatoes into cubes and and place cubes and 1 tsp. of rosemary in boiling water and boil until easily mashed with a fork.
- Remove potatoes from water and combine with cheese, remaining rosemary and milk. Mash to desired consistency and add salt and pepper to taste.
So good! I think I am going to have to make these more often! I guess that explains the 5 pounds of potatoes I bought at Sam’s on Wednesday…
