After five days of family time at the lake in Northwest Arkansas we are home! We had loads of fun with Lew’s parents and sisters spending time with family friend Vicki, who is possibly one of the sweetest people you will ever meet! As our weekend ended we prepared to part ways by taking our traditional family pictures. Charity, my sister in law who has pretty much taught me everything I know about a camera, got us all set up and ready to go. After our big family picture I got my camera out to get some shots of my kiddos.

Now, for those of you who actually read my blog for food and recipe ideas here is the story behind my not zucchini cookies…
Thursday Lew and I, along with the twins, caught a flight and headed to Arkansas. Somehow we packed extremely light and didn’t have any checked baggage. This of course meant I could not bring along my whole wheat pastry flour, applesauce or fresh from the garden zucchini. I was still determined to make these cookies for the family because lets face it, everyone should have a chance to taste the zucchini cookie goodness. Lew and I were in charge of dinner on Friday night and I whipped up tomato pie and a big salad. Lew requested zucchini cookies for dessert so I headed to wal-mart to get all of the ingredients. However, when the family arrived I quickly realized another dessert was not needed. There were plenty of cookies and birthday cakes to last far past the five days we would be there. As a solution to not wasting all of these ingredients I decided zucchini cookies would be a great snack for our plane ride back home on Tuesday. After our family photo shoot everyone left, babies were napping and I pulled out all of the stuff for my cookies. I quickly found out my butter was gone, my zucchini was bad and I never bought my whole wheat pastry flour and I only had one egg! This is where my creativity kicked in…
Not Zucchini Cookies
- 1/4 cup whipped butter; softenend
- 1/2 cup applesauce
- 2 big spoonfuls of peanut butter (I used all natural with honey)
- 2 cups organic sugar
- 1 egg
- 2 cups all purpose flou
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 cups of chocolate chips
- Cream butter, applesauce, peanut butter, and sugar.
- Beat in egg
- Add flour, baking soda, salt mix until well combined
- Stir in chocolate chips
- Bake in 375 degree oven for 9 min.
These are by no means perfect but they taste amazing! They have way too much chocolate and are extremely gooey but the only downside to that is they don’t travel well. By the time we made it home the cookies were melted together into one huge cookie. In an effort to stop eating them I stuck them in the freezer when we made it home at 3:30 this morning. Bad idea! They taste even better frozen. Trust me.
And no, I have no pretty pictures because once they made it in the diaper bag they were no longer pretty. And I know you aren’t complaining because I have provided you with plenty of eye candy today!
