I have officially been gluten free for 3 weeks. (At least I think that is correct
) I have felt great the last three weeks and for the most part have not had any stomach issues. I am still planning on finding a doctor in the near future and having some tests run to see if gluten is really my problem but for now I am really enjoying life without it. Before I completely made my decision to go gluten free I was really worried about what I would eat. It seemed that everything I ate had wheat in it and I was not sure I wanted to have to avoid it. But for some reason I decided that I was going to do it for real and I gave up wheat and haven’t really looked back.
I have a few friends with gluten free kids and I can only imagine what it would be like to have to accommodate a gluten free diet for a child when you aren’t gluten free yourself. So I have decided that I am going to attempt to post at least one thing I eat everyday that is gluten free to help those of you who are gluten free or have gluten free loved ones have easy meal ideas. Because, lets face it, there is nothing fancy coming out of my kitchen these days!
My first recipe is not exactly kid friendly the way I prepare it because of the protein powder. However, you could easily substitute the protein powder with plain or vanilla yogurt. If you have read my blog from the beginning you will know I use to make protein smoothies all the time! I still make them just not as often. Since going gluten free I use them as large snacks before I go to eat meals at church or peoples homes when I am not sure there will be many gluten free options.
So, without further ado here it is…
Ashlee’s favorite shake…
- 1 cup milk (I used 1%)
- 1 frozen banana
- handful of ice
- tbs of cocoa powder
- spoonful of peanut butter
- scoop of vanilla protein powder
Blend and Enjoy! I promise you will love it!

Thanks! I have a son with autism. I have avoided taking him off of gluten for the same reason u gave about the burden of providing food for him. I am also 120 pounds overweight. U inspire me to eat healthier. I will definitely try this recipe.
Alice, thank you so much for reading my blog! Going gluten free is definitely easier than I thought it would be! Please let me know if you have any questions. And I totally understand being overweight! I still have 15 pounds to go to get to my pre pregnancy weight which I was happy with but unfortunately that still leaves my in the overweight category. All I can say is that it is a constant process and for me one that some crazy diet is not going to fix. Healthy eating, moderation and exercise is how I plan to live the rest of my life and I pray that will lead me to my happy healthy weight!
Can’t go wrong with cocoa, peanut butter and vanilla!!! Looks delicious
