Ashlee’s Stuffed Bell Peppers

Happy Monday! This Monday I actually got up and showered and left the house in something other than running pants and a dry fit shirt to go to the gym. We started running errands early this morning and skipped the gym. I am definitely not making it a habit to skip the gym on Mondays but today it worked best for our schedule. I am hoping to either make it out for a walk or try out Jillian Michael’s Yoga Meltdown video sometime this afternoon.

There really hasn’t been much action in our house since Saturday. Yesterday was the normal Sunday for us; church, church, lunch, nap, church. However, we did head over to Mark and Keema’s for dinner and to finish up closing up my order from my Thirty-One party last week. (You might remember their sweet baby Julian from Saturday night.) Keema made spaghetti and breadsticks that totally hit the spot! Spaghetti has never been one of my strong dishes so I always love eating with people that make it well. She also made these little pizza crescent roll things that I could have eaten my weight in. It was so simple, just put a little pizza sauce, cheese and a pepperoni in crescent roll dough and roll up then bake until brown! Yum!

There was a little something different about yesterday than normal Sundays…I made lunch at home! When we walked in the door from the church Lew took over complete baby duty and I took on lunch duty. This evolved into stuffed bell peppers.

Ashlee’s Stuffed Bell Peppers

  • 93% lean ground turkey
  • 1 can fire roasted tomatoes (drained)
  • salt, pepper, garlic to taste
  • tsp. Italian seasoning
  • shredded cheese (whatever you have on hand; I used about 1/4 cup mozzarella and 1/4 cup cheddar)
  • 4 bell peppers; tops removed and seeded

Brown turkey with seasonings. When cooked through add can of tomatoes and simmer for about 7 minutes. Add cheese. Fill peppers with turkey filling. Bake on 400 degree for 20-30 minutes depending on how cooked you like your peppers.

I am working on something fun for our Valentine’s dinner tonight. Lew and I did not exchange gifts or cards, instead we decided to go to Dairy Queen tonight after dinner for dipped cones!

Frustrations

I wrote this post last night but the blog was down so I am posting it now. Have a great day!

I rarely talk about my weight on my blog. I use my blog as a way to hold myself accountable to my healthy living lifestyle as well as helping others learn to have a healthy balance in their families and every day life. There is also a weight loss aspect to my blog that I discuss sometimes and today is going to be one of those times. For some reason I have been trying to lose the same 15 pounds for the last 6 months or so. I have come a long way from the 80 that I gained during pregnancy but these last 15 seem to really want to stay. Thankfully I feel great and most of my clothes fit but I still wish I could get these last 15 pounds off. I workout really hard and for the most part I eat really well so I know eventually it will happen but today I am frustrated. However, when I checked my body fat percentage today I have lost 4% body fat since May! I was proud of that! My hope is that I will continue to gain muscle, burn fat and the weight will come off. I just wish it would go a little faster Smile

Breakfast

Sadly, I forgot to photograph today’s breakfast because it was really good. I started by cooking 2 servings of turkey sausage in a skillet and draining when done. I then sauteed 6 mushrooms and put with the sausage when finished. In the same skillet I cooked 4 scrambled eggs (2 whole eggs & 2 whites). While the eggs cooked I added the sausage, mushrooms and a little shredded cheese and made a big scramble. It was delicious!

I had Daisy looking all cute with her Daisy bow but it didn’t last much after getting in the car Sad smile

Workout

Today’s workout was upper body with cardio intervals. The first part of the circuit was 15 diamond pushups! I did them without stopping and I couldn’t believe it. Last week when we did 12 I thought there would be no way I could do 15 but I did it; 3 sets to be exact!

Lunch

Lunch was quick and on the go because we had a check up for Daisy (she had some ear infection problems last month) so we pulled through the Chick fil a drive thru and ate in the parking lot of the pediatricians office. I had a grilled chicken sandwich on wheat with lettuce and pickle and a medium order of fries. (I love their fries!)

After the doctors appointment I got a very disappointing looking dipped cone (without a cone) from McDonald’s. It was tiny and barely covered in chocolate but it was SO good!

Dinner

Tonight Lew and I cooked dinner for our Wednesday night program at church. We made tacos with lean ground beef, beans, rice and fresh strawberries.

Lew was in charge of the meat. This is what he had going on in the kitchen with his measurements!

Lew would make a great baker because he really likes to follow recipes and does very well baking bread and such. However, when he has a little freedom it always gets a little interesting. He was frustrated because I did not have enough seasoning packets for the amount of meat I bought so he was going to add his own. Now, normally I just make my own seasoning but when doing a lot it is easier to use the packets. Well, Lew got out all the ingredients on the back of the package that we had in our pantry. One of those was cayenne pepper. Let’s just say, this was HOT! We had to drain all the liquid that was left and add a little water just so the kids would be able to eat it! It was pretty funny. Next time I will buy enough seasoning packets.

Well, I am tired and not looking forward to she morning. I sometimes really wish the babies would sleep until at least 8:00! Tonight is one of those nights. Maybe I will get lucky and be able to sleep until 7:30…I would really like that!
